Monday, November 7th
Today I was working from home all day.
I ate: matcha green tea, banana & 1/4 graham cracker (around 7am)
then 1/2 bag of chopped frozen broccoli, 1 potato, and a Dr Praeger's veggie patty (around 8:30)
then 32oz water and a small cup of home-brewed coffee
then Strawberry Vegan Shakeology + flax + oats ; also the other 1/2 bag of broccoli (around 11:30)
I ate quite a lot this morning because I knew I wouldn't be home until about 6 since we will be at swimming lessons, and I was hoping to avoid eating goldfishies and granola bars in my car, as a meal. And it is almost 3 & I am still satisfied! I just had a small decaf coffee at Caribou while finishing up my workday.
I also made it out for a chilly (35ish degrees) 2 mile run on the trails around 12:30/1ish. No music for the second day in a row, and I actually enjoyed it!
I am not sure what I'll eat later - probably another potato & maybe a kale salad with ginger vinaigrette? We shall see.
Edit: On the way to our evening plans, I did snack on some rice chex in the car. Then, I wrapped up the day with a kale salad with ginger vinaigrette, a bag of cauliflower rice that I mixed with a bit of leftover chili. Great, healthy & satisfying day of food!
